My food philosophy changed drastically after I tried an antiinflammatory diet while in the Mexican surf town of Salycito. I was at a retreat, and I already loved healthy food. But I had not idea how eating within these parameters 100% of the time would make me feel!
Here, I was surrounded by crystal blue waters and colorful foods. Of course, in Mexico every tomato is ripened to perfection in the sun. While in this environment, I started to explore and try new things, including the paleo diet. Which eliminated many food allergins I didnt even know irritated my gut.
This way of eating, which focused on whole, unprocessed foods, made me feel amazing. I was energized, clear-headed, and healthy. Not hungry and at peace.
I want to share with you the vibrant and delicious foods I discovered while on this trip Salycito, Mexico. From fresh seafood to tropical fruits and vegetables, there are so many colorful and flavorful options to enjoy. I will organize all my recipes and ideas here. And would love to hear what you would add!
This is my ongoing list of thoughts as I work through experimentation on how to make this work within my busy scheduel.
Starting with some 20-minute dinner ideas. Ill be replacing pics and adapting as I cook these things:
- Salmon, white rice and mixed veggies. Costco prepared Pesto Salmon or top fresh salmon with orange juice and soy
- Ground beef, spaghetti sauce, mixed veggie and zucchini spiral noodles. Or gluten free pasta.

- Spicy Shrimp, leafy greens with balsamic berry vinegarette, couscous
- Seasoned ground beef with onions and bell peppers and purple potatoes
- Chicken, garlic, soy bbq with white rice and mango salsa
- Tortilla soup with bone brothe and shredded chicken
