I love to cook beans and rice, but even more than this being a budget friendly meal it is a great way to teach compassion and gratefulness. This isn’t about the recipes really, even though we found some awesome, easy recipes. We are taking this as an opportunity to teach compassion and reflection. We can teach this while helping our budget, even if that is the main reason we eat beans and rice.
Many countries around the world eat beans and rice for dinner. Some of those countries, like Guatemala, families live on $1 a day. Children go hungry and often have to work instead of attend school. The children are visibly malnourished and parents overworked.
If you want to know more about living on $1 in Guatemala, this movie is amazing!
#EatingforCompassion
If you make the decision to join the beans and rice movement #EatingforCompassion, then you will want to announce to your family that you will be cooking beans and rice each week. It is just a moment to reflect (pray if you like) for the nourishment of food for everyone. There are even lots of US families who struggle to put food on the table. You might even be one of them, and you can still pray and reflect for more abundance of nutrition for everyone.
Beans and Rice for Dinner
This meal is one of the least expensive dinners you can make for a family. A pot of beans made from dry beans with rice can feed a family of 4 people, at least 2 meals for $2.00 . If your usual dinner and lunch the next day typically totals $40 for those same four people, that is a savings of $1976! Yep, trained accountant here. Trust me.
Money in the bank is future education, more charity and more security.
Beans and Rice Recipes
I’m going to link you to some amazing beans and rice recipes using a pressure cooker. In the pressure cooker you can make so many beans in an hour, so this is my preferred method. Leave a link if you have recipe you want to share for #eatingforcompassion
